Abstract
1,167,909. Baked foods. GENERAL FOODS CORP. 12 Dec., 1966 [21 Dec., 1965], No. 55614/66. Heading A2B. A method for making a packaged filled comestible adapted to be warmed and eaten after removal from the package comprises formulating a semi-moist filling of high moisture content which becomes plastic upon warming, formulating a dough to form a crust of lower moisture content than the filling, enveloping the filling with the dough and baking to convert the dough to a crust, the moisture contents of the dough and filling being such that during baking the crust undergoes a greater percentage moisture loss than the filling, and drying the baked product to such a point that, upon subsequent equilibration in a moisture proof package, the moisture content of the filling is sufficiently higher than that of the crust that when the comestible is removed from the package and rapidly warmed, moisture will be transferred from the crust to the filling. A preferred envelope is a dough comprising a fat content of 8-25 per cent, a sugar content of 4-16 per cent, a flour content of 45-60 per cent, 0-5-2.0 per cent leavening, 0-7 per cent non-fat milk solids, and 0- 1.5 per cent salt. The filling may be a cheese, vegetable, or meat filling, or preferably a fruit filling, comprising fruit, a sugar, humectant, and preferably also 1-25 per cent of apple powder.
