Abstract
1,163,694. Free-flowing granular sugar. AMERICAN SUGAR CO. 15 Jan., 1968, No. 2226/68. Heading A2E. A granular free-flowing sugar product is obtained by concentrating a sugar syrup at 120‹-130‹C. to a solids concentration of 91-97 wt. per cent, said syrup containing not more than 15 wt. per cent, based on the solid content, of non sucrose solids selected from invert, corn and potato syrup, dextrose, maltose, lactose, and molassegenic components of black strap molasses, and subjecting a stream of the concentrated syrup to impact beating in a crystallising zone whilst at the same time subjecting it to a forced gas flow within the zone which is at least sufficient to prevent any rise in temperature in the zone and to carry off any water vapour generated in the zone, the retention time of the sugar in the zone being from 10 to 60 seconds, and there being recovered from the crystallising zone a granular sugar product containing less than 2.5 wt. per cent moisture and comprising aggregates of fondant-size sucrose crystals having a size in the range 3-50 microns. This product may be further cooled and dried to not more than 1 wt. per cent moisture. The forced gas flow is preferably air. Additives, such as phosphates, citrates, ascorbates, vitamins, antibiotics, spices, flavouring agents, inert fillers, starch products, honey, potato and maple syrups, may be included. Reference has been directed by the Comptroller to Specification 1,055,385.
