Abstract

1,142,808. Food preparations. KELCO CO. 16 March, 1966, No. 18824/67. Divided out of 1,142,807. Heading A2B. In the preparation of canned food products of the type including starch and a source of calcium, for example creamed soups, New England clam chowder, corn chowder, chow mein, chop sucy, creamed tuna or chicken, meat and fish stews, cream sauce, meat and poultry gravies, au gratin and cheese based sauces and toppings, bisques, a la king and fricassae products, pudding and cream desserts, dessert sauces and fillings, the temperature of the food product is raised to above 160‹F. and thereafter cooled to below 160‹F., a portion of the starch having been replaced by a water soluble alginate preferably in an amount of 1/40-1% wt. of the total weight of the food product. The alginate may be added together with 10-25 wt. per cent. of a calcium binding salt, such as the sodium and sodium hydrogen salts of orthophosphoric, tetraphosphoric, pyrophosphoric, hexametaphosphoric, tripolyphosphoric, citric, lactic, gluconic and carbonic acids.
