Preserving potatoes &c.-Vegetables such as potatoes, sweet potatoes, carrots, &c., are preserved by peeling them in the presence of water or other liquid, then cooking them, preferably by steam at about 220‹ F., then forming them into elongated particles and finally drying the product on perforated supports in a current of air at about 180‹ F., the two latter operations being carried out before the potatoes have been allowed to cool.
