Abstract

1,128,740. Clotted cream. W. RODDA, N. RODDA, E. T. RODDA and B. RODDA [trading as A. E. RODDA & SON], 13 Nov., 1967, No. 51433/67. Heading A2B. Cream is separated from fresh milk and subjected to a cooking process in a forced hot-air circulating oven at 190-200‹F. for ¥-1 ¢ hours. The cream and milk may have been separated for example by centrifuging or by permitting to stand and then skimming. Preferably the cream is in containers which expose the maximum surface area of the cream to the heat treatment.
