Abstract

Alkali metal caseinates are made by preparing a substantially dry mixture of powdered casein and an alkaline alkali metal compound and passing the powder through a reaction zone through which steam and/or water is sprayed. Apparatus is described in which the powdered mixture falls under gravity through a ring of steam jets in a reaction zone at the top of a tower or in which the mixture is injected into the side of a reaction chamber, the steam and/or water being similarly injected.
