Abstract

Cocoa powder is exposed to a mixture of steam and oxygen-containing gas for 20 to 60 minutes at 50 DEG to 90 DEG C. while mechanical disintegration is being effected. The method may be carried out with worm conveyers equipped with nozzles, porous walls or the like through which the steam-gas mixture is supplied, the disintegrating means being quickly rotating pinned discs or like impact pulverizing means.
