Abstract

Potatoes are preheated at a temperature below that of gelantinization of the starch in the potatoes being treated, e.g. between 45 and 58 DEG C., and are subsequently cooked and dehydrated. The optimum time for the preheating is dependent upon the pectinesterase concentration in the potatoes being treated, and on the hardness of the water used where the preheating is effected by immersion in water.
