Abstract
In an improved method for crystallizing sugar during its manufacture, a water-soluble salt of a water-insoluble sulpho-succinate ester, e.g. a sodium, potassium or ammonium salt, is added to an aqueous sugar solution, e.g. to clarified cane or beet juice, before or during its concentration in evaporators, or, preferably, to evaporated thick juice or first or second green syrup being boiled to form a massecuite in a vacuum pan, or to the resulting strike of massecuite as it is being discharged, e.g. into a crystallizer. The preferred salt is di-octyl sodium sulpho-succinate, but salts of di-isobutyl, di-hexyl and di-tridecyl sulpho-succinate esters may be used. The salt may be added in the form of an aqueous solution containing ethyl alcohol and/or propylene glycol, e.g. a solution containing 50% of the salt, 25% of water and 25% of ethyl alcohol and/or propylene glycol, by weight. The amount of the salt may be between 0.10 and 0.50 parts, by weight, per million parts of solution, syrup or massecuite, per one percentage point, by weight, of sucrose therein.
