Abstract

Edible flake is produced from fruit having a sugar content greater than 7% on a liquid basis by macerating the fruit to form a puree, homogenizing the puree, heating and agitating the puree, feeding the puree to a rotating drying drum to form a film on the peripheral surface of the drum, removing the film in the presence of a blast of air which is relatively cooler and drier than the surface of the drum and the surrounding air, suspending the film in the blast while reducing its temperature and subjecting it to cooling means so that the film is formed into a brittle mass which readily particulates when agitated. In the example, peeled bananas after washing are fed through a water seal into a pulper under an inert gas in which they are converted to a puree and ascorbic acid is incorporated. After homogenizing, and heating and agitating, the puree is cooled and passed to a surge tank from which it is pumped to the drum dryer. Other fruits that may be treated include grapes, strawberries, pineapple, guayaba, and curuba. A suitable apparatus is described with the aid of a flow diagram.
