Abstract

1,135,239. Microwave processing of food. CRYODRY CORP. 19 April, 1966, No. 17079/66 Headings A2A and A2D. [Also in Division H5] Food passing through a conductor walled tunnel is heated with microwave energy while maintaining an electrically non- conductive partial covering around the food to reduce the evaporation of moisture therefrom. In one embodiment, food enclosed in partially sealed plastics pouches is passed through a microwave oven of the type described in Specification 1,043,290. Immediately after processing, the pouches are passed through a vacuum chamber to rapidly cool the food and are then completely sealed and frozen for storage. In another embodiment, Fig. 2, the tunnel 12 of the oven carries additionally a long cover 37 of dielectric material, the conveyer belt 17 of the oven being formed of a porous dielectric material such as glass fibre cloth or a perforated plastics material. In a further embodiment, Fig. 4, the sides of the lower run of a porous dielectric conveyer belt 47 are guided upwards, and the sides of the upper run of the belt 46 are guided downwards, by rollers 52 during passage through the tunnel 12<SP>1</SP> of the oven to substantially complete the enclosure of the food. The two runs of the conveyer belt 46, 47 are spaced apart at the entrance and exit ends of the oven to provide access for loading and unloading. The latter two embodiments of the oven also include a sloping floor 14, 14<SP>1</SP> leading to a drain 16. The process may be used for blanching or sterilizing foods such as fish, chicken, bread rolls, spinach, and broccoli, or for cooking foods.
