Abstract

1,053,001. Sausage casings; skinless sausages. UNION CARBIDE CANADA Ltd. Jan. 8, 1965 [April 6, 1964], No. 843/65. Heading A2B. A sausage casing has a caramel-containing coating on its interior surface. The casing may be a conventional extruded and shirred casing. Preferably the coating contains 0.5-3.5 mg./sq.in. of caramel, and the casing preferably contains 10-25 wt. per cent moisture. A skinless sausage may be prepared by stuffing a casing as above, cooking, and then removing the casing, the caramel imparting a pleasing appearance to the sausage.
