Abstract

Sucrose esters, obtained by the interesterification of sucrose with a C1- 8 alkyl ester of a C6- 30 aliphatic acid or a glycerol ester of such aliphatic acids in the presence of a basic catalyst and an organic solvent, are purified by a process comprising (i) evaporating off the reaction solvent, (ii) dissolving the residue in an ethyl alkanoate, containing 2-6 carbon atoms, at 60-90 DEG C., (iii) extracting this solution 2-3 times at 60-90 DEG C. with a volume of water equal to about 10-20% of the initial volume, and separating an aqueous phase containing unreacted sucrose, (iv) cooling the water-saturated organic layer to 0-30 DEG C. to form two phases, the organic phase containing unreacted alkyl esters of the aliphatic acids and unreacted or partially reacted glycerides, (v) separating the aqueous phase which contains the sucrose esters, (vi) extracting said sucrose esters with a mixture of butanol and cyclohexane, or with butanol alone, (vii) washing resulting organic solution with water and NaCl solution and (viii) evaporating to dryness to obtain the sucrose esters in high purity. The preferred ester solvent is ethyl acetate. According to the proportions of the reactants in the interestification, mono- or poly-sucrose esters are obtained. The usual interesterification solvent is dimethyl formamide. The examples relate to sucrose-monolaurate, -monopalmitate, -mono-undecenoate-dimyristate and to mono-esters derived from the acids of coconut, palm, ox tallow and rape-seed oils.
