[Also in Division A2] A sausage casing comprising sugar-cured cohered collagen fibrils is made by extruding a tubular body from a fluid mass of swollen collagen fibrils into a coagulating liquid; hardening the body in the wet state, applying a solution containing a reducing sugar to the body, and heating the body at a temperature and for a time sufficient to heat-cure the body. Heat-curing may be effected at from 70-80‹ C. for a period of 24 hours Preferably, the body is dried prior to heat-curing, suitably at from 35-80‹ C. for from 7-9 hours The solution containing the reducing sugar may also contain a plasticizer, e.g. glycerol. Specified reducing sugars include erythrose, threose, arabonose, ribose, xylose, fucose, mannose, glucose, galactose and fructose, which may be present in concentrations of from 0À005%-0À20% by weight of the solution. Desirably, the hardened tubular body is waterwashed, before immersion in the reducing sugar solution In a preferred method, a fluid mass of swollen collagen fibrils obtained from unlimed animal hide, having a collagen solids content of 3À2%-4% by weight is extruded to form a tubular body, which is immersed in a solution of ammonium sulphate to coagulate the collagen and then in an alum solution to harden it A non-collageneous fibrous material, e g hardwood cellulose, may be slurried with the collagen fibrils and extruded therewith to form a casing comprising a non-collageneous fibrous material encapsulated in a matrix of unlimed hide collagen fibrils cohered to form a translucent hyaloid structure. Sausage casings so made are characterized by a combined swell and deformation of 6%-14%, a wet tensile strength of 0À7-1À5 1b, and a shrink tension of 0À3-1À0 1b. They are suitable for both pork and beef products, and the casings containing beef products may be smoked. Casings may be filled with wiener emulsion, the casing being shrunk on and bonded to the emulsion and edible therewith.
