Food composition of the filling type for cookies, cakes and or wafers comprising one or more carbohydrates, proteins, and dietary fibers, or mixtures thereof, and a vegetable oil, such that the oil represents 25 to 50% by total weight of the composition and the dietary fibers represent between 2 and 15% by total weight of the composition, the dietary fibers having a proportion of fibers greater than 40% by weight, and the dietary fibers being chosen with a density of between 100 g/L and 600 g/L before incorporation into the food composition.
Description
The present invention relates to a food composition textured by dietary fibers and based on vegetable oil, and finds its application in particular in the field of fatty fillings used in the preparation of pastry, biscuit and/or pastry products.
Industrial bakery fatty fillings generally comprise an anhydrous matrix with a thick and creamy texture, the viscosity of which depends on the temperature and the shear to which these matrices are exposed during food processes for the preparation of finished industrial food products. The matrices comprise exotic vegetable fats, of the palm, palm kernel, copra (coconut) or cocoa butter, shea butter type, optionally mixed with animal fats (in particular butter derivatives). These fats make it possible to obtain solid fodder at room temperature thanks to their crystallization. But the thermo-reversibility of these fodders makes the finished products very sensitive to storage conditions.
To implement these anhydrous matrices in industrial processes, it is necessary to provide a heating step to fluidify them and allow their incorporation in quantity and distribution under stress in the finished products. This heating is essential to achieve a level of fluidity that allows pumping and dosing. The pumping step is critical because industrial processes require bringing the heated matrix from a preparation tank to the manufacturing line where the matrix is dosed and/or spread into finished products. These fluidity constraints require very strict temperature control at all stages of the food process in order to avoid production stoppages due to premature congealing in the supply ducts of the production line.
These matrices also contain sugars, aromatic ingredients (chocolate, cocoa, hazelnut, vanilla, milk, yoghurt, etc.) and emulsifier-type additives, and it is therefore necessary to heat the entire mixture. However, the organoleptic properties, such as melt-in-the-mouth, creaminess, smoothness, freshness, etc., are sensitive to the temperatures applied during the manufacturing process of the finished products, and it is not possible to go too high in temperature. Therefore, these matrices impose very strong constraints on the manufacturing processes, with very low temperature variation tolerances of the mixture throughout the process in order to find a compromise between the capacity to industrialize and the properties of the finished product.
In the state of the art, there is a need for food compositions not requiring the presence of saturated fats, but all having guarantees of stability over time, and in particular of stability observed by absence of migration of ingredients from the composition in other layers of the finished product. There is also a need to simplify the food processes for manufacturing this food composition, and to alleviate the thermal regulation constraints throughout the manufacturing chain.
To this end, the subject of the invention is a food composition comprising at least one of a carbohydrate and/or a protein, dietary fibers, and a vegetable oil such that the oil represents 25 to 50% by weight of the composition and the dietary fibers represent between 2 and 15% by weight of the composition, the dietary fibers having a specific proportion of fibers greater than 40% by weight, and the dietary fibers being chosen with a density of between 100 g/L and 600 g/L dry. The density of the dry dietary fibers can in particular be evaluated before incorporation into the food composition.

- ces fibres peuvent présenter une granulométrie comprise entre 20 et 500 µm, de préférence 20 et 250 µm, et notamment entre 35 et 150 µm ;

- the composition can be anhydrous
- dietary fiber can contain more than 90% fiber,
- these fibers can have a particle size of between 20 and 500 μm, preferably 20 and 250 μm, and in particular between 35 and 150 μm;

The invention also relates to the use of a food composition according to the invention as filling for a food product, in particular bakery and/or Viennese and/or pastry products, the food composition being in particular implemented in fillings for cookies, cakes and or wafers.
The invention also relates to a food process for preparing a food composition according to the invention implemented in bakery and/or Viennese and/or pastry products, in which:
- the liquid vegetable oil is mixed with dietary fiber, carbohydrates, proteins, and possibly other compounds
- this mixture is driven into a tank, in particular according to a beater/mixer type process
- This mixture is pumped into the pipes making it possible to dose and/or deposit a determined quantity of this mixture in each of the finished products. In particular, the pumping step can take place several hours to several days after the formation of the mixture. Optionally, it may be unnecessary to mix the composition again before pumping it.
In particular, the method does not require the prior mixing of the vegetable oil and the dietary fibers before forming the mixture. The composition may be free of an additive or surfactant ingredient.
Preferably, the mixture according to the invention can be done in two stages, the first during which the liquid compounds of the composition are mixed together to form a liquid phase, and a second during which all the other compounds of the composition is added to the mixture, and mixed with the liquid phase, such that the mixing speed of the second stage can be higher than the mixing speed of the first stage.
One of the interests of the invention is thus to propose fillings which do not require either heat treatment or particular mechanical treatment for their implementation. They are particularly easy to use in cooked products to which they adhere, then solidify while offering a texture comparable to fillings containing solid fats and/or saturated fats. Indeed, the composition according to the invention rearranges on contact with the biscuit, cake or wafer to which it is added, rapidly evolving towards a fixed structure in the absence of movement. The finished product filled in this way is dry, non-sticky and does not depend on its storage temperature. Indeed, the dietary fibers maintain the liquid oil in the fodder, and create a network which keeps all the compounds in a fixed state.
Description de mode(s) de réalisationDescription of embodiment(s)
To prepare a composition according to the invention, a mixing tank is used, having for example a capacity of more than 25 kg, for example of the order of 300 kg, with double walls which allows the management of the temperature of the tank, also called a cream vat. This mixer conventionally comprises two main blades, which rotate at a fairly slow speed (for example less than 50 rpm) in the horizontal direction, and at least one of the two blades comprises a satellite blade which can rotate faster (for example higher at 50 rpm) than the two main blades, and in a different direction, for example vertical. The shear rate performed by the blades is quite low, on the other hand the satellite blade allows an expansion by bringing air into the mixture.
To proceed with the mixing, the fluids are pumped by automated mechanisms or manually dosed, as well as all the other compounds of the composition, the whole being stored at ambient temperature before incorporation into the tank. The standard mixing time is around ten minutes. The cream vat is generally maintained at a temperature of between 20 and 30° C., and always below 40° C. for the compositions according to the invention.
In parallel with the preparation of the food composition according to the invention, with a view to preparing a finished product, in particular a filled wafer, a wafer dough is prepared in a kneader and transferred to continuous ovens. Sheets of cooked wafers are thus produced, and ready to be spread. For this purpose, the food composition prepared in the cream tank is fed into line transfer pipes up to a hopper allowing a film of composition to be deposited on sheets of wafers, and a second sheet of wafer is deposited on the film. of composition to adhere the two sheets of wafers together.
In the same way, biscuits can be prepared, and the composition will be deposited in a pellet of filling of a determined thickness, and another biscuit will be deposited on the pellet, the composition will then be placed between the two biscuits to make them adhere between them.
Advantageously, to accelerate the freezing of the composition, the assembly of the two sheets of filled wafers can undergo a cooling step at less than 10° C. for a few minutes, also useful for facilitating the cutting into finished products of wafers ready to be placed packaged for sale. One of the advantages of the food composition according to the invention is that it makes it possible to dispense with very precise temperature control of the transfer pipes between the cream tank and the system for dosing the composition into the finished product, these latter can be at room temperature.
The composition according to the invention comprises powdered ingredients before their incorporation into the cream tank, such as icing sugar, optionally supplemented with corn starch, dextrose, dairy powders, such as whey powders, skimmed milk and whole milk.
The composition according to the invention may comprise proteins such as dairy proteins, in particular whey proteins, soluble proteins from the aqueous phase of milk, caseins, and/or vegetable proteins.
The composition according to the invention comprises a vegetable oil comprising at least 90% unsaturated fatty acids, in particular oleic sunflower oil.
The composition according to the invention comprises dietary fibres, and more particularly vegetable fibers suitable for human consumption. These vegetable fibers can be soluble or insoluble in water. In particular, the plant fibers marketed under the following names can be used in a composition according to the invention:
- VITACEL WF 101 from JRS - RETTENMAIER which are dietary fibers made from wheat,
- VITACEL HF 401 from JRS - RETTENMAIER which are dietary fibers made from oats,
- VITACEL EF150 from JRS – RETTENMAIER, which are dietary fibers made from peas,
- VITACEL BAF 90 from JRS – RETTENMAIER which are dietary fibers made from bamboo.
Among the dietary fibres, those which have 90% of their fibers with a grain size less than 200 μm are considered to be short fibres, the others being considered to be long fibres. The invention also provides for the mixture of long and short fibers.
For example, the compositions below are examples of compositions according to the invention, in particular filling compositions, in which the proportions are expressed as a percentage of the total weight of the composition.
Oat fibers are selected to have a fiber content greater than 80%. The pea fibers are selected to have a fiber content greater than 40%, for example of the order of 50%. Composition #1 can in particular be implemented with a cake. Composition #2 can be implemented in wafers. Preferably for the wafers, a higher proportion of short fibers is preferred to the long fibers, because they promote congealing after the cooling prior to the operations of cutting the wafers. Indeed, it was discovered that this proportion made it possible to achieve a denser fibrous mesh within the forage.
The viscosity of the fillings obtained is for example between 2000 mPa/s and 200,000 mPa/s at ambient temperature, these measurements being carried out with a Brookfield viscometer model LV DVI M. A consistency of these fillings can also be evaluated using a Bostwick consistometer, and for the above compositions a non-zero flow, and of a maximum of 15 cm is observed at room temperature.
The invention thus makes it possible to propose fillings which make it possible to dispense with the presence of palm or copra oil, to improve the nutritional profile of the finished products, and to simplify the industrial production lines of these finished products.
