Abstract

On décrit une machine (10) automatique pour l’élimination à sec de la panne d’affinage de jambons (H) qui comprend :- un cadre de support (15) délimitant un compartiment d’élaboration (W) de la machine (10) ;- des moyens de suspension (30,35,45,50) associés au cadre de support (15) et aptes à soutenir au moins un jambon (H) disposé avec son propre axe longitudinal incliné par rapport à l’horizontale ;- un corps de rencontre (55), disposé à l’intérieur du compartiment d’élaboration (W), apte à rendre disponible une surface d’appui (65) gisant sur un plan sensiblement incliné par rapport à l’horizontale, et apte à entrer en contact avec une surface postérieure dudit au moins un jambon (H),- au moins une brosse pivotante (60), disposée à l’intérieur du compartiment d’élaboration (W) et donnant sur la surface d’appui (65) du corps de rencontre (55), ladite brosse pivotante (60) étant associée de manière pivotante au cadre de support (15) par rapport à son propre axe de rotation (R) et apte à brosser au moins une portion d’une surface antérieure du jambon (H) ; ladite machine (10) étant caractérisée en ce que le corps de rencontre (55) est articulé à charnière mobile au cadre de support (15) par rapport à un axe de charnière (C) parallèle à l’axe de rotation (R) de la brosse pivotante (60), et mobile en rotation entre une première position dans laquelle la surface d’appui (65) est distale de la brosse pivotante (60) et une deuxième position dans laquelle la surface d’appui (65) est proximale à la brosse pivotante (60).
