Abstract

Le dispositif concerne un outil permettant de diminuer le temps d’élevage d’un alcool. L’invention permet de traiter de gros volumes, d’arrêter et de redémarrer le processus de vieillissement à souhait de plusieurs cuves d’alcool alternativement. Il est constitué d’un châssis avec une partie fixe (15) et une partie mobile (16) prenant en sandwich un ensemble de plaques de bois (2), de plaques vin (3) et de plaques air (4). Il dispose d’un double réseau qui permet de faire circuler (11-12) le vin en contact sur une face de chacune des plaques de bois (2) et faire circuler (13-14) de l’air sous pression en contact sur la face opposée de chacune des plaques de bois sans jamais se mélanger au circuit vin. L’outil permet le vieillissement du vin, ou tout autre type alcool dont le bois apporte une valeur rajoutée.
