Abstract
Le dispositif concerne un outil permettant de diminuer le temps d’élevage d’un alcool. L’invention permet de traiter de gros volumes, d’arrêter et de redémarrer le processus de vieillissement à souhait de plusieurs cuves d’alcool alternativement. Il est constitué d’un châssis avec une partie fixe (15) et une partie mobile (16) prenant en sandwich un ensemble de plaques de bois (2), de plaques vin (3) et de plaques air (4). Il dispose d’un double réseau qui permet de faire circuler (11-12) le vin en contact sur une face de chacune des plaques de bois (2) et faire circuler (13-14) de l’air sous pression en contact sur la face opposée de chacune des plaques de bois sans jamais se mélanger au circuit vin. L’outil permet le vieillissement du vin, ou tout autre type alcool dont le bois apporte une valeur rajoutée. Cette invention concerne un outil permettant l’accélération du vieillissement de vin ou tout autre type d’alcool dont le bois apporte une valeur rajoutée. Il diminue le temps d’élevage. Le Vieillissement du vin en général est réalisé dans des barriques ou dans des cuves de bois, de forme et de capacité différentes pendant plusieurs années suivant le type de produit de la Région ou du Pays. L’inconvénient de la tonnellerie telle qu’elle est construite est : le coût de fabrication lié au nombre de pièces différentes qui la compose, le travail d’assemblage de tous ses accessoires. Le coût du transport est important à cause du volume imposant de chaque barrique lié au ratio poids volume. Des pertes de volume dans les chais de vieillissement, notamment en hauteur et des surfaces au sol perdues, sont à déplorer. On constate que le temps de manutention pour la mise en place de nouvelles barriques et le remplacement de ces dernières dans les chais n’est pas négligeable. Le nettoyage de chaque barrique, une après l’autre après utilisation, est encore une perte de temps et d’énergie. L’inconvénient de ce type de méthode pour le vin est : qu’une infime partie est en contact direct avec le bois dans la barrique, seul le temps permet l’homogénéité de la totalité du volume dans chaque barrique. La réalisation du produit fini prend beaucoup de temps notamment à cause du vin stocké dans la barrique en régime laminaire, et du faible ratio de m² de bois en contact avec le vin, d’où la difficulté de reproduire une qualité similaire de produit d’une année à l’autre. Un même lot de produit est stocké dans plusieurs barriques, ce qui implique plus de surveillance. Du temps est consacré à refaire les niveaux de vin sur chaque barrique à cause de l’absorption et l’évaporation. La mise en œuvre pour l’extraction des lies sur des petits volumes n’est pas facile comme la mise en œuvre pour la filtration et le conditionnement du produit fini. L’échangeur accélérateur de vieillissement fig. (1) est composé d’un châssis en acier inox avec une entrée vin (11) et une sortie vin (12), une entrée air (13) et une sortie air (14). Le châssis supporte un ensemble de plaques de bois fig. (2) dont le nombre, les dimensions, longueur, largeur, épaisseur peuvent être variables. Les plaques de bois fig. (2) sont réalisées en bois de chêne, de merrains ou de châtaignier. Le coût réduit est dû à la simplicité de conception, à la facilité de fabrication des plaques de bois fig. Le nombre et les dimensions des plaques de bois fig. (2) n’étant pas figés, elles s’adapteront à tous les châssis fig. (1) déjà existants dans le commerce à condition que la partie fixe (15) et la partie mobile du châssis (16) soient équipées de deux entrées et de deux sorties comme indiquées sur la fig. (1). Elles s’adapteront par le nombre, par la surface des plaques de bois fig. (2), par le temps de mise en œuvre de ce procédé au volume de produit à traiter et stocké dans les cuves inox, alors le ratio m² de bois en contact par hectolitre de liquide traité sera un facteur évolutif et maîtrisé. Elle sera réalisée en matériau alimentaire incompressible, sa dimension hauteur, largeur, sera similaire aux dimensions de la plaque de bois fig. (2). Sur le haut et le bas de la plaque fig. (3) « VIN » on voit un rainurage (17) qui permet l’alignement, le centrage de toutes les pièces sur le châssis. L’orifice en haut à droite (13) et l’orifice en bas à gauche (14) sont pour le passage de l’air et sont coaxiaux aux trous de la plaque de bois fig. (2). La découpe rectangulaire en bas à droite (11) sert à l’entrée vin et la découpe rectangulaire en haut à gauche (12) sert à la sortie vin, elles devront correspondre aux trous de la plaque de bois fig. (2). Pour un débit pré établi, l’épaisseur de la plaque « VIN » fig. (3) devra être adaptée à la dimension de la chicane, afin que le liquide circule à l’intérieur en régime turbulent, sans pour cela générer une perte de charge importante sur le débit. La plaque « VIN » fig. (3) avec sa chicane a pour but de conserver un écartement identique entre chaque plaque de bois fig. (2). Elle évite la déformation de la plaque bois fig. (2) lors de son utilisation.

Sur le haut et le bas de la plaque « AIR » on voit un rainurage (17) qui permet l’alignement, le centrage de toutes les pièces sur le châssis. L’orifice en bas à droite (11) et l’orifice en haut à gauche (12) sont pour le passage du vin et sont coaxiaux aux trous de la plaque de bois fig. (2). La découpe rectangulaire en haut à droite (13) sert à l’entrée air et la découpe rectangulaire en bas à gauche (14) sert à la sortie air, elles devront correspondre aux trous de la plaque de bois fig.
