Titre : Procédé de production d’une boisson Procédé de fabrication d’une boisson non gazeuse selon lequel on injecte dans la boisson, au cours de la fabrication, un gaz de traitement constitué de CO2 ou de N2O ou d’un mélange CO2 / N2O, éventuellement additionné d’un gaz à faible solubilité dans un liquide tel que l’azote, la boisson étant conditionnée en fin de ligne dans un récipient, ladite injection permettant, à l’ouverture du récipient, de réaliser la désorption du gaz injecté dissous et l’entrainement par le gaz désorbé de composés d’arômes de la phase liquide de la boisson vers la phase gazeuse au dessus de la phase liquide (espace de tête), permettant de renforcer la perception aromatique olfactive à l’ouverture du récipient.Title: Process for producing a beverage Process for manufacturing a non-carbonated beverage in which a process gas consisting of CO2 or N2O or a CO2 / N2O mixture is injected into the beverage during production , optionally added with a gas with low solubility in a liquid such as nitrogen, the beverage being packaged at the end of the line in a container, said injection allowing, on opening of the container, to carry out the desorption of the injected dissolved gas and the entrainment by the desorbed gas of aroma compounds from the liquid phase of the drink towards the gaseous phase above the liquid phase (head space), making it possible to reinforce the olfactory aromatic perception when the container is opened.
