Abstract

L’invention concerne un procédé de traitement de sucre, comprenant successivement : une première filtration frontale d’un jus sucré pour obtenir un premier filtrat ; une deuxième filtration frontale du premier filtrat pour obtenir un deuxième filtrat ; et la mise en contact du deuxième filtrat avec une résine de chromatographie échangeuse de cations de sorte à charger la résine en cations divalents et à collecter un jus sucré adouci, la résine étant disposée sous la forme d’un lit ayant une hauteur h comprise de 0,75 à 3 mètres. L’invention concerne également un dispositif de traitement de sucre.
