Abstract

Dispositif de gélifiant alimentaire à base de composants naturels, non perturbateur de saveur, à grande durée de conservation, et disposant d'une grande flexibilité d'application et de texture salé ou sucré, chaud et froid qui se caractérise par un mix-gommes gélifiants constitué de 70% de Psyllium et de 30% de gomme de Guar, ces deux composants étant assemblés avec des tolérances de proportion à plus ou moins 10%.
