Ces solutions sont ainsi basées sur l’utilisation de molécules de taille importante, qui stabilisent l’émulsion par la structuration qu’elles imposent à leur milieu. Les brevets FR2722116 et FR2720644 proposent, quant à eux, des exemples d’utilisation de particules solides qui assurent la dispersion d’une des deux phases dans l’autre. Ces particules présentent également l’avantage d’offrir des textures produit plus avantageuses pour le consommateur. D’autres solutions sont proposées par les brevets CA2295533 et FR2771293, lesquels décrivent respectivement l’utilisation d’un gel cationique et d’un agent lipophile dont la balance hydrophile/lipophile (HLB) est inférieur à 3.
