Abstract

La présente invention concerne un procédé d'induction et de production de peridia de truffe comprenant les étapes suivantes : a. une étape de préparation d'un extrait par extraction par un solvant à partir d'un broyat de plant truffier, b. optionnellement, une étape de lavage à l'acétate d'éthyle, c. une étape de solubilisation de l'extrait obtenu à l'étape a) ou à l'étape b) d. une étape de mise en culture de mycélium de truffe en présence de l'extrait soluble obtenu à l'étape c), e. une étape d'induction de la formation des peridia, f. une étape de multiplication des peridia sur un milieu nutritif, et g. la récolte des peridia formés. La présente invention concerne également l'utilisation desdits peridia pour la fabrication d'un produit aromatique à odeur et à goût naturel de truffe ou pour la préparation d'un produit alimentaire, d'un complément alimentaire, d'un aliment nutraceutique et/ou d'un produit cosmétique.The present invention relates to a method of induction and production of truffle peridia comprising the following steps: a. a step of preparing an extract by extraction with a solvent from a ground truffle plant, b. optionally, a washing step with ethyl acetate, c. a step of solubilizing the extract obtained in step a) or in step b) d. a step of culturing truffle mycelium in the presence of the soluble extract obtained in step c), e. a step of inducing the formation of peridia, f. a step of multiplying peridia on a nutrient medium, and g. the harvest of peridia formed.
