Claims (15)
- REVENDICATIONS1. Composition alimentaire solide comprenant au moins un polymère naturel et un ou des épices, caractérisée en ce qu'elle comprend - de 20 à 60 % en poids de polymère(s) naturel(s) par rapport au poids total de matière sèche - de 15 à 50 % en poids d'épice(s) par rapport au poids total de matière sèche, et - de 1 à 20 % en poids d'au moins une charge minérale par rapport au poids total de matière sèche.
- 2. Composition selon la revendication 1, caractérisée en ce que le polymère naturel est choisi parmi les polysaccharides, en particulier les dérivés de cellulose, les dérivés d'amidon, les dérivés de la chitine, les phycocolloides, les pectines, la gellane, le pullulan, la gomme arabique, et leurs mélanges.
- 3. Composition alimentaire selon la revendication 2, caractérisée en ce qu'elle comprend au moins un dérivé de cellulose, de l'alginate et de la gomme arabique.
- 4. Composition selon l'une des revendications 1 à 3, caractérisée en ce que les épices sont sous forme de solides pulvérulents.
- 5. Composition selon l'une des revendications 1 à 4, caractérisée en ce que la charge minérale est choisie par les phyllosilicates.
- 6. Composition selon la revendication 4, caractérisée en ce que la charge minérale est du talc.
- 7. Composition selon l'une des revendications 1 à 6, caractérisée en ce qu'elle comprend en outre une ou des huiles essentielles.
- 8. Composition selon la revendication 7, caractérisée en ce qu'elle comprend jusqu'à 30 % d'huile essentielle par rapport au poids total de matière sèche.
- 9. Composition selon l'une des revendications 1 à 8, caractérisée en ce qu'elle a un taux d'humidité allant jusqu'à 10 % en poids de la composition totale.
- 10. Composition selon l'une des revendications 1 à 9, caractérisée en ce qu'elle est sous forme de film.
- 11. Composition selon la revendication 10, caractérisée en ce que le film a une épaisseur de 50 à 1000
- 12. Composition selon l'une des revendications 10 ou 11, caractérisée en ce que le film est sous forme d'une feuille ou d'une bandelette.
- 13. Procédé de fabrication d'une composition selon l'une des revendications 1 à 12, caractérisé en ce qu'il comprend les étapes de - préparer un mélange des constituants du film sous forme liquide aqueuse, - de déposer le mélange précédemment obtenu sur un support approprié, et 3029745 12 d'évaporer l'eau en passant dans un système de séchage.
- 14. Utilisation d'une composition alimentaire solide selon l'une des revendications 1 à 12, pour aromatiser et/ou colorer des aliments pendant leur cuisson.
- 15. Procédé d'aromatisation et/ou de coloration d'un aliment pendant sa cuisson, 5 caractérisé en ce que l'on ajoute à l'aliment, avant ou pendant sa cuisson, une quantité appropriée de composition alimentaire solide selon l'une des revendications 1 à 12.
