The present invention relates to an electronic control system for a cooking appliance for detecting, through a glass-ceramic plate, the temperature and overheating of the heated container. The present invention makes it possible in particular to solve an important problem of induction cooking appliances, overheating of the metal container left empty, or without water, on the apparatus in operation. This problem is particularly present in the field of professional cooking, since it uses high-power cooking appliances and the concern for productivity requires the professional to monitor several containers at the same time and possibly to let them warm between two 15 services for quick use. The use of a temperature probe, for example a thermistor, mounted just below the insulating plate, is known to those skilled in the art but is not a satisfactory solution, particularly in the case of appliances high power cooking. Indeed, the insulating material introduces a delay in the temperature detection, this delay may be sufficient to generate a strong overheating and irreversible deformation of the container. Patent Application WO97 / 16943 discloses an induction cooking apparatus in which the temperature of the container is measured by electromagnetic detection of the magnetic permittivity variation of the bottom of the container. This system uses a measurement winding placed under the container and presents several difficulties: It requires to add a measuring winding which will have to withstand the temperature and the field induced by the cooking winding. In addition, this system generally measures the temperature of the bottom of the container but can not detect an occasional overheating. In addition, the measurement depends on the material used for the bottom of the container, which may require an impractical calibration to achieve.
The object of the present invention, represented in FIG. 1, is to propose providing a cooking apparatus with a sensor (3) sensitive to infra-red radiation, a sensor placed under the insulating plate (2) separating the heating element. (1) of the container (4), so as to detect the thermal radiation emitted by the container. Preferably, as shown diagrammatically in FIG. 2, the heating element is an inductor winding (1) which, powered by an alternating current of a few tens of thousands of Hertz, heats the metal bottom of the container (4) by the effects known electromagnetic induction, that is to say both through the current induced in the metal and thanks to the losses of the magnetization cycle. The invention is applicable to other types of heating elements, such as electrical resistors placed under an insulating plate. In this case, it will be convenient to position the sensor so that it does not directly measure the infra-red radiation emitted by the heating element. Typically, infra-red radiation detection will be used to stop the heating when the measured radiation exceeds a limit value. In an advantageous embodiment, the radiation detection, at least when it reaches a safety limit value, is used to regulate the temperature of the container by preventing its overheating. The container thus remains hot even if it is empty, so it is immediately available for rapid cooking of food. Advantageously, the sensor (3) will be optimized for the detection of infra-red radiation of wavelength between 2 and 5 micrometers, such as for example a thermopile-type sensor with optical window of suitable material. He showed that limiting detection to this band of radiation, one obtained an extremely rapid detection of inadvertent overheating, that is to say when the bottom of the container suddenly passes from a temperature of 100 to 200 degrees centigrade in normal use, more than 300 degrees in case of vacuum heating. In addition, the detection obtained is sufficiently independent of the material used for the bottom of the container without requiring calibration specific to each type of container.
Moreover, this range of infra-red wavelength is well transmitted by the glass-ceramic plates optimized for heating by heating element. In a preferred embodiment, shown in FIG. 3, the sensor (3) is placed a few centimeters below the insulating plate (2), to prevent it being disturbed by the temperature or the magnetic field, and is mounted in a tube (5) allowing it to aim the surface of the container without capturing lateral parasitic radiation. For this tube, a low-transmissive material for infrared radiation with a wavelength of between 2 and 5 microns, for example glass, will preferably be chosen. The invention will particularly apply to the case illustrated in FIG. 4 where the container has a spherical shape of the wok type, as used in several Asian culinary traditions, the insulating plate then having the shape of a spherical bowl (6). ). The sensor (3) with its optional tube (5) will then advantageously mounted so as to radially target the container wall, on the maximum heating zone typically located in height around the lower third of the heating element. Advantageously, as illustrated in FIG. 3, the tube (5) protecting the sensor will be inserted between two turns of the inductor winding (1). In a preferred embodiment, the overheating detection process will firstly take into account, in order to decide whether the container is in an overheating situation, not the value itself of the measured intensity of the infra-red radiation but the speed. of increasing this measured intensity.
In this case, the process of detection of overheating, after detecting a high rate of increase, may advantageously set a static detection threshold, for any subsequent detection. This threshold will be set to a value close to the value of the radiation intensity measured during the detection of a high rate of increase. This produces a self-calibration of the system. Advantageously, a conventional temperature probe, thermistor or other, will be placed directly under the insulating plate and the detection process will correct the measured value of the infra-red radiation intensity to subtract the part of the measurement that can come from the radiation. thermal insulation plate (2) itself. Indeed, this plate heats during use and its radiation is added to that of the container to be detected.
