La présente invention concerne un vinaigrier à usage domestique avec dispositif de remplissage et soutirage intégré au couvercle. Le vinaigrier domestique traditionnel est soit un petit fût en bois, soit un pot de grès, soit encore une bonbonne en verre. Les trois sont munis d'un orifice en haut pour verser le liquide et les deux premiers au moins d'un robinet en bas pour soutirer le vinaigre. Placé dans un local normalement chauffé, la cuisine par exemple, à un endroit d'où on ne le bougera plus, le vinaigrier permet la fabrication de vinaigre en quantité et à usage domestique suivant deux méthodes. Ces deux méthodes traditionnellement utilisées consistent soit à se procurer un morceau de « mère », c'est-à-dire un amas d'Acetobacter qui se forme au cours de la fermentation du vin ou de toute autre 10 boisson alcoolisée (cidre, bière...), soit attendre que celle-ci se forme. Si on utilise une mère, on verse du bon vin (ou du cidre, de la bière...) dans le vinaigrier, on dépose en surface la « mère », puis on referme en laissant passer de l'air et on patiente de 4 à 6 semaines. Sans utiliser de mère, on verse dans le vinaigrier % de bon vin (ou autre boisson alcoolisée 15 telle que cidre, bière...), et 1/3 de vinaigre issu de vin (ou vinaigre de cidre si cidre, de bière si bière, etc...), puis on couvre. En quelques jours, un voile fin et blanchâtre se forme à la surface du liquide. Ce voile sur la surface du vinaigre est formé par des bactéries du genre Acetobacter. Elles sont soit transportées par l'air, soit présentes dans le vinaigre utilisé pour ensemencer la préparation. Cette bactérie permet la transformation de l'éthanol en acide acétique, et donc de l'alcool présent dans le 20 vin (le cidre, la bière, etc...) en vinaigre. Cette pellicule bactérienne (mycoderma aceti) ne doit pas épaissir trop au risque de déposer au fond du vinaigrier. Quelle que soit la méthode utilisée, au bout de quelques mois, on commence à soutirer du vinaigre, en petites quantités, en rajoutant aussitôt dans le vinaigrier une quantité équivalente de l'alcool que l'on souhaite transformer en vinaigre (vin, cidre, bière...) en prenant soin de ne pas 25 abîmer ni immerger le voile. Le remplissage d'un vinaigrier domestique traditionnel se fait donc, comme évoqué ci-dessus, par l'orifice haut prévu à cet effet, ce qui risque d'abîmer ou d'immerger le mycoderma au fond du vinaigrier, de diminuer le rendement de vinaigre produit et de nuire à la qualité du vinaigre obtenu. Le soutirage du vinaigre s'effectue traditionnellement au moyen d'un robinet en partie basse 30 aux risques de fuites de vinaigre, d'odeurs ou encore d'engorgement du robinet.The present invention relates to a vinegar maker for domestic use with filling and racking device integrated in the lid. Certains fabricants préconisent le versement lent et précautionneux du liquide par le haut du vinaigrier permettant à l'utilisateur d'effectuer le remplissage mais en n'éliminant pas le risque d'immersion et de précipitation du mycoderma. Les utilisateurs de vinaigriers domestiques traditionnels ne sont pas des professionnels et ne respectent pas forcément les modes d'emploi décrits. Ce faisant, il est patent soit qu'ils mettent plus de temps à obtenir leur vinaigre, soit qu'ils obtiennent un vinaigre de qualité médiocre. Parce qu'ils laissent le mycodermà se développer sur le vinaigre sans le retirer, ils limitent la surface d'oxygénation de ce vinaigre, diminuant ainsi son rendement de production. De même, parce qu'ils ne retirent pas le mycoderma avant de faire l'appoint en vin (ou en tout autre alcool dont ils 10 cherchent à obtenir du vinaigre), ils augmentent son risque d'immersion au fond du pot et donc les risques d'engorgement du robinet de soutirage et de dégradation des qualités gustatives du vinaigre. Le dispositif selon l'invention permet de remédier à ces inconvénients. Il se compose en effet selon une première caractéristique, d'un pot étanche avec couvercle comportant une pipette tronconique. Le couvercle comprend une partie de recouvrement pourvue d'un orifice circulaire 15 central dans lequel vient se loger la pipette équipée d'un bouchon étanche. Cette pipette permet le remplissage du pot ; ainsi quand l'utilisateur retire le bouchon, soulève la pipette et verse un liquide (eau ou liquide alcoolisé), la pipette permet l'écoulement du liquide au fond du pot sans nuire à l'intégrité du mycoderma. La pipette permet également le soutirage du vinaigre ; ainsi quand l'utilisateur débouche la pipette dans son logement, cette pipette se remplit de vinaigre. L'utilisateur 20 peut alors la reboucher et la retirer de son logement pour transporter le vinaigre soutiré jusqu'à la bouteille de service à remplir. Il suffit alors à l'utilisateur de la déboucher à nouveau au-dessus du goulot de la bouteille de service pour remplir cette dernière. Lorsqu'elle est retirée de son logement cette pipette tronconique laisse également une empreinte (un trou) dans le mycoderma aceti permettant à l'utilisateur d'en jauger l'épaisseur, à l'ceil, et de s'en saisir plus facilement pour 25 l'extraire et le jeter quand cette épaisseur devient trop importante (à titre indicatif plus de 5 mm). Selon des modes particuliers de réalisation l'invention s'étend également aux vinaigriers dont la pipette est solidaire de la partie de recouvrement du couvercle. Le dessin annexé illustre l'invention : La figure 1 reprêsente en coupe, le dispositif de l'invention. - 3 - En référence à ce dessin, le dispositif comporte un pot étanche (6) avec couvercle comprenant une partie de recouvrement (5) pourvue d'un orifice central (10) dans lequel vient se loger une pipette (4). Cette pipette (4) tronconique est dotée en partie supérieure d'un orifice d'entrée (3) fermé par un bouchon étanche (2) au moyen d'un joint (1). La pipette (4) est dotée d'un orifice inférieur (9) par lequel 'peut entrer ou s'écouler le liquide. En fonctionnement le dispositif contient du vinaigre (8) avec une mère (mycoderma) (7) en couche superficielle. Remplissage du vinaigrier : lorsque l'utilisateur enlève le bouchon (2) et soulève la pipette (4) au travers de l'orifice du couvercle (10) jusqu'à ce que l'orifice inférieur (9) ne soit plus immergé et affleure au niveau de l'empreinte centrale laissée par la pipette (4) dans le mycoderma (7), la pipette (4) peut être utilisée comme entonnoir pour vider le liquide (eau et vin par exemple) nécessaire en appoint après soutirage. Soutirage du vinaigre : la longueur de la pipette (4) et le niveau de vinaigre (8) à l'intérieur du pot (6) permettent le prélèvement du vinaigre (8) dans le fond du pot (6) dès lors que l'utilisateur retire le bouchon (2). Lorsque la pipette (4) est plongée dans le vinaigre (8) et que son orifice d'entrée (3) est dépourvu du bouchon (2), la pipette (4) se remplit par son orifice inférieur (9) jusqu'au niveau du vinaigre (8) dans lequel elle est plongée et dont la surface est délimitée par la mère (mycoderma) (8). Après avoir obturé l'orifice d'entrée (3) avec le bouchon (2) l'utilisateur peut retirer la pipette (4) du pot (6) sans que le vinaigre ne s'écoule par l'orifice inférieur (9). Le vinaigre ne sortira de la pipette (4) que lorsque son orifice d'entrée (3) sera mis à nouveau à la pression atmosphérique, par retrait du bouchon (2) rendu étanche par le joint (1) au dessus d'une bouteille de service par exemple. Lorsque la pipette (4) est retirée du pot (6) elle laisse dans la mère (mycoderma) (7) une empreinte cylindrique (trou) en son centre. Après retrait de la partie de recouvrement (5), ce trou central permet à l'utilisateur de mesurer, à l'ceil, l'épaisseur atteinte par le mycoderma(7). Il lui permet en outre d'extraire aisément le disque de mycoderma (7) - lorsque son épaisseur le justifie - en le saisissant et en le soulevant par ce trou central au moyen d'un ustensile quelconque ou du dispositif en bois (pince) mis à disposition avec le vinaigrier pour égouttage et extraction du mycoderma . Le retrait du mycoderma (7), alors essentiellement constitué de bactéries mortes, permet d'améliorer le rendement de production du vinaigre (8) par augmentation de la surface de liquide en contact avec l'oxygène. Dans la forme de la réalisation selon la figure 1, le pot étanche du vinaigrier (6) comporte en partie supérieure un rebord sur lequel vient s'adapter une partie de recouvrement (5) percé d'un orifice circulaire central (10). L'orifice central (10) de la partie de recouvrement (5) permet d'accueillir une pipette (4). Cette pipette est dotée, en partie supérieure, d'un orifice supérieur d'entrée (3) bordé d'un rebord circulaire épais qui vient s'appuyer sur la partie de recouvrement (5) lorsque la pipette (4) y est logée. La pipette (4) tronconique est, dans sa majeure partie, de forme cylindrique et terminée par un cône aplati doté d'un petit orifice inférieur (9) central. L'orifice supérieur d'entrée accueille un bouchon (2) pourvu d'un joint (1) qui doit permettre une étanchéité complète à l'air (et donc à la pression atmosphérique) de l'intérieur de la pipette (4) lorsque son mode d'utilisation le nécessite. A titre d'exemple non limitatif, le pot du vinaigrier (6), le couvercle (5) et la pipette (4) 10 seront réalisés en grès émaillé. Le pot (6) muni de son couvercle (5), de sa pipette (4) avec bouchon (2) et joint (1) présente un encombrement maximal de l'ordre de 23 cm de hauteur pour un diamètre de 15,5 cm.
