L'invention a pour objet un amidon modifié caractérisé en ce qu'il présente : . une masse moléculaire moyenne en poids allant de 250 000 à 2 000 000 Da ; . une solubilité, mesurée selon un test A, allant de 50 à 85%. L'invention porte également sur un procédé de fabrication dudit amidon et son utilisation pour la fabrication d'un liant aqueux.
