Abstract
Description
The invention relates to a device for producing and packaging at least one food item, especially for the dressing of a dessert plate. Dressage is the stage of placing and presenting food on a plate. Decorative elements can be used to carry out the dressing of the plate, especially in the case of dessert plates. These decorative elements are generally edible and can have various shapes. In the case where the decorations are edible, that is to say are in the form of food items, some forms are difficult to use because of the fragility of such items. This is particularly the case that the articles in the form of thin flat plates are particularly fragile. Special attention must be paid to their packaging. Thinner articles in more original forms, for example non-planes, are not or very little used at present for the same reasons. In fact, the current manufacturing and packaging methods do not make it possible to securely package such articles. Articles in the form of a blade or corrugated or curved plate may optionally be made at the training site, then placed directly on the plate, by carefully handling said articles. However, it is not possible to manufacture these items on a remote production site, and then package them and distribute them via conventional circuits. The invention aims to remedy these drawbacks, by proposing a device for producing and packaging a food item making it possible to easily produce, store, handle and distribute a food item in the form of a non-planar plate of small thickness. To this end, the invention relates to a device for producing and packaging at least one food item, in particular for the dressing of a dessert plate, characterized in that it comprises: a first element comprising at least one a peripheral wall and at least one profiled bottom wall defining together at least one hollow, a food article being intended to be applied against one of the faces of the bottom wall so as to conform to it, and a second element having at least one peripheral wall and at least one bottom wall, of profile corresponding to that of the bottom wall of the first element, said peripheral wall and said bottom wall of the second element defining together at least one hollow, at at least a part of the first element being inserted into the recess of the second element, or vice versa, so that the bottom wall of the first element is situated facing the wall bottom of the second element and parallel thereto, said food item being intended to be maintained between the bottom walls of the first and second elements.
In this way, during manufacture, the food item in the form of a plate is disposed on the bottom wall of the first element and then shaped thereon. The second element, having a bottom wall of complementary shape to that of the first element, is then stacked or nested on the first element, the food item is then protected and maintained in position between the first and the second elements. The risk of deterioration of the food item is thus reduced, all of which can be handled easily. The first and second elements thus form a package for storing and transporting the food item to its place of use. Advantageously, the second element has a structure identical to that of the first element. The manufacture of the elements is thus facilitated. According to a characteristic of the invention, each element is made of synthetic material, the bottom wall and the peripheral wall of each element being thin walls forming a single piece. Preferably, each bottom wall has a generally concave, convex, corrugated or twisted shape. It is then possible to make food items in the form of bridges or waves. According to a possibility of the invention, the face of the bottom wall of the first element, against which the food article is intended to be applied, comprises, at least in part, a peripheral positioning flange of said food item, protruding from said face. Advantageously, each peripheral wall of an element converges from its free edge to its edge attached to the bottom wall.
The convergent shape facilitates the insertion of the first element into the hollow formed by the second element or, conversely, of the second element into the hollow formed by the first element. The invention furthermore relates to a method of producing and packaging a decorative element by means of a device according to the invention, comprising the following steps: - arranging a food article, for example in the form of plate, on the bottom wall of the first element; heating the food article so as to soften it so that it conforms to said bottom wall; inserting the first element in the hollow of the second element, or vice versa, so as to bring the bottom walls of the first and second elements together; - Keep the first and second elements in close position. In this manner, the first member forms a mold for shaping the article, and the first and second members form a package for facilitating the transportation of the food item. It is then possible to realize, simply and industrially, food articles of complex shape. The holding in position of the first and second elements can be done by any type of known means, for example by fixing the elements using self-adhesive labels, by adding a sleeve surrounding the assembly, by welding elements between them, at the level of ruptible zones, or by means of complementary latching means. According to one characteristic of the invention, the heating step of the food article is carried out in an oven. The temperature of the oven must be high enough that the food item is softened, but low enough to prevent it from melting or being damaged. Preferably, the food article is a plate based on biscuit, chocolate, and / or confectionery. In any case, the invention will be better understood with the aid of the description which follows with reference to the appended schematic drawing showing, by way of nonlimiting examples, several embodiments of this device 35 for producing and packaging. Figure 1 is a perspective view; Figures 2 to 4 are longitudinal sectional views showing the various steps of producing the food article; Figure 5 and 6 are views corresponding to Figure 3, two other embodiments of the invention.
A first embodiment of the invention is shown in Figures 1 to 4. These figures show a device for producing and packaging a food item 1, especially for the dressing of a dessert plate.
The device comprises first and second elements 2, 3 of identical structures. Each element 2, 3 has a generally rectangular shape, seen from above, and comprises a peripheral wall 4 and a profiled bottom wall 5 defining together at least one hollow 6 open downwards.
The peripheral wall 4 has an upper edge 7, connected to the bottom wall 5, and a lower free edge 8, provided with a horizontal flange 9. The peripheral wall 4 converges from the edge 7 attached to the bottom wall 5 towards the free edge 8. The profiled bottom wall 5 has an upper face 10, 20 facing outwards and a lower face 11, facing the inside of the hollow 6. The upper face 10 of the bottom wall 5 is equipped at its edges, a peripheral flange 12 for positioning the food article 1 protruding from said face 10. Each element 2, 3 is made of synthetic material, the bottom wall 5 and the peripheral wall 4 being thin walls obtained in one piece. Each element 2, 3 is for example made by thermoforming. In the case of the first embodiment, the upper face 10 of the bottom wall 5 is concave. In general, it is said that the bottom wall 5 is of concave shape. Figures 2 to 4 show the method of making and packaging the food item 1 with the aid of the device shown in Figure 1. As shown in Figures 1 and 2, the food item 1 is all 35 firstly in the form of a flat plate or plate of rectangular shape and thin, for example between 0.5 and 5 mm.
This article 1 is placed on the upper face 10 of the bottom wall 5 of the first element 2, the assembly then being heated in an oven. When the article 1 is made of chocolate, the temperature in the oven is between 25 and 30 ° C, the heating time being between 20 minutes and 2 hours. Of course, the temperature and the heating time vary according to various parameters, such as the date of manufacture of the chocolate or biscuit used, the manufacturing technique used, or the type of material used to make the food item.
The heating of the article 1 makes it possible to soften it so that it conforms to the profile of the bottom wall 5. The second element 3 is then mounted on the first 2, so that the first element 2 is inserted in the hollow 6 of the second element 3.
In this way, the bottom walls 5 of the first and second members 2, 3 extend parallel to each other, the distance e between said bottom walls 5 substantially corresponding to the thickness of the food item 1. L food article 1 is thus maintained between the first and second elements 2, 3. These are then held in position relative to each other, for example using self-adhesive labels, by adding a sleeve surrounding the two elements, by welding the elements together, at rupturable areas, or through complementary latching means (not shown). The assembly formed by the two elements 2, 3 and the food item 1 can thus be stored and transported without risk of deterioration, given the rigidity of the elements 2, 3. Before use of the food item 1, it suffices to remove the second element 3 from the first element 2, by detaching the labels, by removing the sleeve, by breaking the ruptible zones or by separating the aforementioned latching means. The food item 1 is then released and can be used for dressing a plate. In the embodiment described below, the food item 1 is made of chocolate. It could also be made of biscuit or any type of confectionery.
In addition, more than two elements 2, 3 could be stacked on each other, a food item 1 being each time disposed between two elements. Finally, each element 2, 3 could comprise at least two distinct bottom walls 5 arranged side by side so that, with the aid of two elements 2, 3 of such a structure, it is possible to produce and package at least two food items 1. Figure 5 shows another embodiment in which the bottom wall 5 is concave, that is to say that the upper face 10 of the bottom wall 5, intended to receive the food item 1, has a concave shape. In this case, the upper face 10 is turned towards the hollow 6, the second element 3 being inserted into the hollow 6 of the first element 2. FIG. 6 represents another embodiment in which the bottom wall 5 is of a shape general wavy. Of course, any other type of non-planar shape could be considered. It goes without saying that the invention is not limited to the embodiments of this device and method, described above as examples, but embraces all variants.
