La présente invention a pour but de pallier aux inconvénients précités en proposant un procédé et une installation de fabrication de portions alimentaires de légumes feuillus permettant l'obtention d'un produit de qualité visuelle et nutritionnelle supérieure. L'intégrité des feuilles étant globalement conservée. Le blancheur BL peut présenter en outre une section de refroidissement présentant une ou plusieurs rampes de pulvérisation supérieures pour projeter de l'eau froide, uniquement sur la face supérieure de la nappe fine de légumes. L'eau froide est à une température voisine de 4 à 5 C. Aussi, en aspergeant les feuilles d'un seul côté, ledit blancheur conforme à l'installation permet de maintenir le rangement des feuilles préalablement formées. Les moyens pour découper ladite nappe fine de légumes peuvent être constitués par un dispositif de découpe DC par jet d'eau à haute 20 pression, notamment à 2.000 bars. L'installation peut en outre présenter des moyens SR pour refroidir lesdites portions afin de rigidifier lesdites feuilles de légumes et de donner de la cohérence à ladite portion. II pourra s'agir de tout moyen de surgélation mettant en oeuvre 25 des techniques connues, telles que par exemple un surgélateur à tunnel ou un surgélateur par contact. L'installation peut présenter, en amont des moyens pour former une nappe fine uniforme de légumes, de façon connue une ligne de préparation comprenant les dispositifs suivants : 30 - une trémie d'alimentation en feuilles de légumes, un désableur DS, notamment constitué par un tambour grillagé rotatif de séparation, - un aéroséparateur AE présentant des moyens de ventilation pour une séparation par flux d'air, - un laveur LV présentant des moyens pour immerger les feuilles dans un bac d'eau. L'invention concerne en outre une portion alimentaire de légumes feuillus, tels que notamment des épinards en branches. Selon l'invention, la portion alimentaire se présente sous la forme de feuilles de légumes superposées et agglomérées par au moins un traitement thermique constituant un feuilletage. On comprendra ici l'expression traitement thermique au sens large comme pouvant comprendre l'étape de blanchiment seule ou encore l'étape de blanchiment et l'étape de surgélation, notamment divulguées dans le procédé conforme à l'invention selon un mode particulier de réalisation. Naturellement, d'autres modes de réalisation, à la portée de l'homme de l'art, auraient pu être envisagés sans pour autant sortir du cadre de la présente demande telle que définie par les revendications ci-après.
