Abstract

Bakery dough dividing machine is for producing a series of dough pieces, all of equal vol., for making loaves of bread. The machine comprises a cylindrical roll which is rotated about its axis. In its circumferential surface, the roll has an open mouthed mould cavity of vol. equal to that of a dough piece. At one stage in the course of each revolution of the roll, the mould cavity is located briefly in communication with the outlet of a dough supply hopper. At this stage, dough is transferred under pressure through the hopper outlet into the mould cavity. To obtain this pressurised transfer, the dough hopper is pref. a closed vessel into which compressed air, etc. can be supplied to drive dough towards the outlet. When the roll has rotated to bring the filled mould cavity to a depositing position, compressed air is pref. injected through the base of cavity to free the dough piece and eject it cleanly from the cavity. The hopper is pref. the rotary bowl of a dough kneading machine operating inside an air-tight chamber. Used in prodn. of dough pieces for making loaves of bread. Positive transfer of dough from kneading bowl into mould cavity and clean demoulding of dough piece from dividing machine mould cavity are obtd. Very compact, hygienic and trouble-free combination of kneading and dividing operations is obtd.
