Abstract

The vessel is of the type which has an internal header tank into which must can be piped from the base of the vessel. The must in the header tank is then poured back, pref. via spray nozzles, on top of the crust floating on top of the must in the vessel. A heat exchanger is installed between the top of the vessel head space and the base of the header tank. The exchanger is used to heat the must fraction in the header tank before return to the vessel. The underside of the heat exchanger simultaneously warms the top of the head space of the vessel.
