Abstract

Procédé pour la préparation d'un produit protéinique isolé de la farine de graines de tournesol. Ce procédé comprend l'extraction directe des protéines avec des solutions aqueuses alcalines tout en formant un complexe des composés indésirables comme les polyphénols (acides chlorogénique et caféique) avec des sels d'aluminium pour empêcher l'oxydation de ces polyphénols en quinones, puis la précipitation des protéines par acidification au point iso-électrique en présence d'un composé pouvant maintenir l'aluminium en solution, la redissolution de ces protéines et leur reprécipitation en présence encore du même composé pouvant maintenir l'aluminium en solution. Utilisation de ce procédé pour préparer des concentrés protéiniques comestibles, non toxiques, pouvant être également adaptés à la nourriture des êtres humains.
