Abstract

L'invention concerne un moule à fromage Le moule comprend une virole 1 et un fond 2 formé d'une paroi non perforée 3 sur les deux faces supérieure et inférieure de laquelle sont rapportées des nattes support, respectivement 5 et 18, maintenues sur leur pourtour dans des rainures annulaires 7 et 17 ménagées à la base de la virole 1, des fentes périphériques 10 et 20 étant prévues au niveau desdites nattes support pour permettre l'écoulement latéral vers l'extérieur du petit lait sortant de la masse de caillé du fromage Application à l'égouttage des fromages contenus dans des moules empilés.
