Abstract

A delicatessen prod. is mfd. from sausage paste which is mixed and filled into a casing. The cased sausage is stoved and then slow-dried. The sausage paste is now moulded into a selected shape which is encased for stoving and drying. The casing is then removed leaving a sausage which retains the moulded shape. This moulded shape is pref. a round or oval disc or a flat square or rectangle; alternative shapes include emblematic designs. The casing is pref. food quality cellophane sheet and the stoving and drying operations are carried out with sausages on carrier trays. After removal of the casing, the shaped prod. is pref. soaked in a bath of gelatine warm enough to be just fluid. Immediately after soaking, the prod. can be coated with a flavouring or spicy material, e.g. including pepper. Used in mfr. of delicatessen prod. viz. a sausage. The sausage retains a moulded shape which can be very different from the conventional form. In partic., flat ovals, rounds, squares and rectangles are shaped ready to fit in sandwiches, pies, etc.
