Abstract

Prepn. of cheese-making salt (NaCl) comprises seeding it with spores of molds, partic. Penicillium caseicolum. The spores are pref. mixed with the salt fro a suspension of the spores in brine contg. an alkali metal or alkaline earth metal ferrocyanide. Before incorporating the spores, the salt is pref. dried and sterilised at >100 degrees C, then cooled to 30 degrees C in a current of sterile air of relative humidity 75%. After injecting the spore suspension the water in the product is evaporated to obtain dendritic NaCl crystals in which the spores are imprisoned. The salt is used for the manual or mechanical dry salting or brining of cheese. It is esp. used in the mfr. of camember type cheeses and provides a means of obtaining a homogeneous seeding of the cheese with the Penicillium caseicolum spores.
