Abstract
Prepn. of a proteinic prod. principally from fish, by non-thermal defatting and sepn. of phospholipids from the pulverise fish and/or sea invertebrates, using an organic solvent or solvent mixt. and subsequent pressurising, followed by release to atmos. press. Before pressurising, a soln. of 5-7% tannin in glycerine is added at a ratio of 0.6-0.66 litre per kg dry material, the whole mixed for >=5 minutes, and then an aq. soln. of 1-3% of trivalent metal salts added at a ratio of 0.3-0.33 litres per kg, followed by mixing for 2.5-7 minutes. Pressurising is at 40-60 atmos. for 2.5-7 minutes, and the temp. is maintained at 35-38 degrees C during release of press. The trivalent salt soln. is pref. FeCl3 or AlCl3. The prods. can be used in the mfr. of pharmaceutical prepns. with an aminoacid base; for foodstuffs for fish and other animals; and for improving the nutritive value of dietetic and other foodstuffs. The tannin and metal salt combination forms a coating which preserves the natural structure of the proteins during the process. The prod. is of a neutral taste and odour, not specific to fish, and does not contain fat-soluble pesticides. It can be kept for a long time without chemical changes because of the absence of the fatty fraction, and can be frozen several times.
