Abstract

Packing film for soft cheese comprises a plastic film bonded spotwise or linewise to a sheet of waxed paper. The plastic film formed from co-extruded film of different thermoplastics such that the film has a water vapour permeability of 50 g/m2/day under 'tropical' conditions, an O2 permeability of 350 cm3/m2/day and a CO2 permeability of 500 cm3/m2/day. Pref. film comprises an 8 mu thick nylon-6 film, a 3 mu thick ionomer film and a 16 mu thick low density polyethylene film. The polyethylene component may be whitened with 5 wt % TiO2. The plastics part of the composite wrapping gives the correct balance of gas permeabilities to allow absorption of O2 and release of CO2 and water vapour during the ripening stage in the pack, whilst preventing excessive loss of moisture during storage s that wt. loss and drying out of the product occur. The waxed paper part is packed in contact with the cheese to prevent sticking of the cheese to the film. The packaged cheese can be stred for longer periods than when using waxed paper alone, while the ripening of the cheese (e.g. brie, coulommiers, camembert, bonbons, etc.) is not hampered.
