Abstract

A process for using bananas and various tropical fruits and vegetables comprises drying ripe bananas, drying the other prods. and forming a powder or meal, or extracting the juice of the prods. The prods. obtd. are used in compsns. ranging from powders to pulps. An orange wine is prepd. from orange juice and rum and this together with kola forms an orange tonic wine. The prodts. may be used in a wide variety of food compsns., and have the advantage of being stable to storage in the absence of moisture. Drying is pref. in warm air at 80-130 degrees C. In the case of bananas the centre core is removed and the banana is reduced to a paste before drying. Other ingredients for the compsns. specified are chocolate compsns., honey, yeast and fish-meal.
