Abstract
The oil cake or seed is first pretreated to give an extract from which the protein is coagulated using an alkaline earth metal salt. The coagulate is treated under pressure to form a protein cheese, which is then solidified at is not >-5 degrees C. The cheese is then decongealed at ambient temp. or higher. Process for obtaining a heat stable protein fraction comprises soaking oil cake or seed of vegetable origin for 3-8 hrs. at 10-60 degrees C in the presence of Na2CO3, heating to 100-120 degrees C over 10-20 mins. and then coagulating the protein using an alkaline earth metal salt followed by isolating the protein by decantation and filtration. Protein food obtained from the above vegetable materials contains >=60% (Nx6.25) protein, 3-10% glucides, and 4-6% ash and has organoleptic properties resembling meat. The product is used as a food or as an additive in the food industry. Compared with previous vegetable protein products. The above contain less anti-nutrional factors than previous products, e.g. antitrysine, saponins etc. an and less fermentable sugars and also the protein is not denatured.
