Abstract

Meat or fish portions are filled into packages which are then enclosed in a chamber to be subjected first to vacuum condition to extract air from the packages and then immediately to compression by compressed air in order to close up all spaces between portions inside a package and between the packaging material and the portions. Factory prodn. of vacuum packaged raw foods, e.g. meat and fish, esp. hams, pressed into packages ready for cooking. Obviates air inclusions in and between packed portions. The sudden pressing by compressed air closes up all spaces which would otherwise fill up with juices during cooking and result in loss of quality when the juices were subsequently frozen. The pressing operation is applicable to a wide range of sizes and shapes of packages, not requiring a press mould limited to a single type of package.
