Abstract

Rapid thawing of deep frozen food prods. is effected by subjecting them, at the same time, to the action of high frequency radiation and to a current of cold air. The deep-frozen prod. to be brought up to ambient temp. is placed on a conveyor belt; this is made of insulating material, is a bad conductor of heat and is pref. perforated to allow the passage of air. Microwave radiation, produced by a magnetron, is channeled by a wave-guide into the treatment cavity through an opening towards the prod. to be thawed. At the same time currents of cold air are introduced through pipes. After passage through the heating zone and the cold air treatment, the prod. passes before pipes blowing hot air. By the time the prod. reaches the end of the conveyor belt, it is at the desired temp. through out its. vol. The thawing time is much reduced by the process and the final temp attained is uniform throughout the prod.
