Abstract

Alanine t-butylamide and its salts with org. and inorg. acids, are used as sweetening agents, being 210 times as sweet as sugar on a w/w basis; and 3.9 times sweeter than sodium cyclamate on a w/w basis. They are prepd. by reaction of alanine having a protected NH2 gp. with t-butylamine, then removing the protecting gp. Such gps. may include phthaloyl, benzyloxycarbonyl, t-butoxycarbonyl etc. Racemic or optically active alanine may be used.
