Abstract

Prodn. of a concentrated culture of a micro-organism able to convert lactose to lactic acid, partic. for use in the mfr. of cheese, by (a) growing the micro-organism in a fermentation zone in a nutrient medium and passing the mixt. of micro-organisms, nutrients and lactic acid or its salts produced therein into a first chamber of a dialyser sepd. from a second chamber of this by a membrane selectively permeable for the nutrient and lactic acid and salts thereof but not for the micro-organisms, (b) supplying a regenerating soln. to the second chamber of the dialyser, with a concn, high enough in nutrient constituents and low enough in lactic acid and its salts for migration of nutrient to the first chamber and lactic acid and its salts to the second chamber to take place, (c) recycling of the liquid contg. the micro-organisms now enriched with nutrient and substantially free from lactic acid or its salts from the first chamber to the fermentation zone and continuing the culture of the micro-organism therein. Enables a much higher cell concentration to be achieved e.g. 1011/ml instead of about 109/ml, so that much smaller volumes of the concentrated starter soln. are reqd. for inoculation per litre of milk in cheese mfr., without the need for centrifuging and special processes reqd. to prevent contamination of the concentrate.
