Abstract

Protein concentrates suitable for consumption by man because of a low nucleic acid content (2%) are obtd. by subjecting a suspension of microorganisms (e.g. yeasts) to a treatment destroying cell walls (pref. mechanically) then adjusting the pH to 6-12 to dissolve proteins and nucleic acdis, heating the suspension pref. at 60-100 degrees C to effect pptn. of the proteins but not the nucleic acid, and sepg. the pptd. proteins from the liq.
