Abstract

Lid is hinged on lever arm attached to pneumatic cylinder and drops into vertical position when open. Vessel is spherical and can be inverted to empty out the potatoes. Steam at 8 atm. and 150 degres C. is injected and then the pressure suddenly released. The release is aided by opening the lid. This causes the skins to come off due to water under the skin boiling on the release of pressure.
