Abstract

Grape waste, is fed onto a transverse grilled endless belt, moving over a series of tanks; leachings from which are back cycled countercurrent over the bed, discontinuously via troughs which are tilted in unison, so that aerated fermentations occurs. The residual skins are then conveyed to a second similar appts. fed with hot water, in which tanks for leachings are heated by submerged steam injection to 90-95 degrees C; the output being tartrate solution. The unit may be automatically controlled, in response to density of thin wire output; so that manual labour and supervision is economised.
