Abstract

Device comprises a frame fitted with equidistant notches which receive the rods on which the cloth is draped; the cloth hangs in the spaces between the rods and adopts a hemicylindrical shape. This gives the dough a similar shape whatever the vol. variations caused by the fermentation. Thus the dough is kept in shape during the final stages of fermentation and the periphery is aerated by direct contact with the air. The underside is also in contact with air through the interstices of the cloth, without the possibility of water vapour condensing at the lowest point. When loaded, the frames are placed in chests mounted on castors for easy movement. The frames can be re-used with the same cloths since these remain permanently dry. No special handling is needed additional that of the conventional methods.
