Abstract
Ice cream is ut into edible containers contg. 5-60, pref. 25-45%, of 0.7-3.8 mm dia. particles of a crisp starchy material, pref. biscuit, in a frozen mass of edible fat dispersed homogeneously in a sugar syrup, pref. contg. 35-50% saccharose. The compsn. also contains 20-60 vol. % of a dispersed inert gas. The fat is put into emulsion in the molten state in the sugar syrup to obt. an oil-in-water emulsion, then the starchy material is dispersed, the inert gas beaten in, and the mixt, is cooled, and cast in a mould at below-10 degrees C. The prods., obtd when filled with ice cream, will retain their crispness in storage.
