Abstract

Rectangular slabs of cheese are coated simultaneously on top, and on two sides by a rotating cylindrical brush, the bristles of which are guided against the sides by deflectors of triangular shape between each slab. The cheeses are moved below the brush on a conveyor belt and are retained by wire grid pockets in the belt, or rest on it, held by bars on which the deflectors are fitted. Two brushes, transverse to the direction of movement of cheeses, suffice to coat all sides of the slabs, instead of 3 brushes being rqd. as with known installations.
