Abstract

Dried fruits esp. prunes are prepd. by (a) contacting the fruits with an aqs. soln contg. a sugar, (b) repeating this treatment with aqs. sugar solns having increasing sugar contents until the sugar syrup at least partly replaces the cellulose liquid of the fruit, and (c) drying the treated fruits. Low quality fruits can be used in the process.
